Chasing Ernie! In November 2014 Rob Stimpson had the privilege of being part of the Centenary voyage of Ernest Shackleton’s ill fated 1914 Trans Antarctic journey. He worked as the expedition photographer on the ship, the Sergei Vavilov. Rob is originally from the town of Hudson, Quebec. He is a professional photographer and artist. Rob has achieved international publication, award-winning photographs and a penchant for wilderness. He started out as a photographer’s assistance in Basel, Switzerland and has photographed for Ontario Tourism, Parks Canada, Ontario Parksand many organizations supporting tourism. I found this recipe at www.recipetineats.com and have added a few breadcrumbs for extra crunch. It is a quick dinner on a busy night or a classy entre for a dinner party. The spice mixture can be stored in a shaker and used if you are preparing just a single chicken breast. It seems that the chicken breasts we purchase in the store have increased in size, so sometimes preparing just one chicken breast has enough meat for 2 hungry seniors… although, “The Big Guy” tells me, he prefers working with two at a time.
